Caprese Avocado Toast

Ingredients:

Two slices of sourdough bread, toasted
½ avocado, thinly sliced
8-10 grape tomatoes, sliced in half
Fresh mozzarella, small chunks or pearls sliced in half
Drizzle of olive oil and balsamic vinegar
Fresh basil, chopped chiffonade style
Kosher salt & cracked black pepper to taste
Crushed red pepper flakes (optional)

Instructions:

  1. Place two slices of sourdough bread in the toaster. While bread is toasting, cut avocado into two halves, store second half in the refrigerator in an airtight bag/container. Remove pit and peel the skin from the other half of the avocado, then place face-side down on cutting board and cut into slivers.

  2. Fan the avocado onto the toast and top with sliced grape tomatoes, fresh mozzarella, and drizzled olive oil and balsamic vinegar.

  3. Sprinkle fresh basil and finish with salt and pepper. For a little extra heat, lightly sprinkle crushed red pepper flakes. Fork and knife optional.

This Caprese Avocado Toast will hit you right in the bruschetta feels. I don’t think I’ve ever come across someone who disliked this fresh and flavorful combination, so this easy and simple recipe is going to be a crowd pleaser. Whether you’re whipping up a quick, but balanced lunch or surprising your mom with a Mother’s Day brunch, whoever gets to indulge in this toast is going to be left feeling full and satisfied.

Here are some tips for making the BEST Caprese Avocado Toast:

  • Make sure your avocado is ripe. The easiest way to tell if your avocado is ready (besides feeling it—and possibly bruising it— and checking its coloring for darkened pigments) is by attempting to pop off its stem. If you apply pressure with your thumb and the little nubby stem easily falls off with little effort, your avocado is ready to go. If it doesn’t come off as easily, or at all, it may need a few more days to ripen.

  • Don’t forget the olive oil drizzle. For my lovers of Mediterranean cuisine— I know you know the importance of fresh, high quality olive oil. When your olive oil is good, that essence takes a dish above and beyond. Adding olive oil will also accompany the healthy fats found in the avocado and create a smooth mouthfeel.

  • Take pics (obviously) but then put your phone away. The key to getting the MOST out of your meal is to a) make it taste amazing and b) give it the attention it deserves. Practicing mindfulness while eating, like removing distractions and savoring every bite, allows us to better enjoy our food and pay closer attention to our hunger and fullness queues.
